Natural Phospholipids
Natural phospholipids contain a heterogeneous mixture of fatty acids that is dependent on organism type, dietary history, and environmental growth conditions. The fatty acid composition of phospholipids changes in response to environmental factors where different fatty acid compositions have unique functions. Natural phospholipids contain relatively high amounts of unsaturated fatty acids, particularly in the sn-2 position. The amphiphilic nature of phospholipids is the source of their ability to form cellular membranes.
